Here’s my take on the California Kale Bowl.
1 c long grain brown rice
1/3 c almonds
1 pkg broccoli florets
4 c kale, destemmed and chopped
1/2 onion, chopped
2 tbsp grape seed oil
1 can white beans
1 can kidney beans
1/3 c citrus vinaigrette
cook brown rice per usual.
in a separate skillet, sauté broccoli and onions.
stir in beans and kale. Cook until kale is wilted.
im a bowl, mix brown rice and veggie mixture. Toss with the citrus vinaigrette and top with sliced almonds.
